Dutchess Private Reserve Straight Bourbon Whiskey – Our award-winning bourbon (Hudson Valley Magazine and Maxim Magazine) has been described as subtle and sophisticated. A beautiful bouquet of spice and honey with gentle notes of vanilla coming out to provide for a smooth finish. This is a bourbon for sharing with friends.
“Dutchess Private Reserve has a lovely coppery color to it, or maybe like a gorgeous amber maple syrup. It starts off with a wonderful baked quality like cookies in the oven, butter, butterscotch, cookie dough, honey, vanilla, and lots of spice. It got a little bit of a bite up front, but goes down incredibly smoothly without a lot of burn. And it’s definitely not as sweet as it smells. In fact, it’s a beautiful, elegant, wonderful bourbon. Straight Bourbon Whiskey Sometimes creating something to its maximum potency is a good idea. Our Straight Bourbon, bottled at 115 proof, is both bold and refreshing, with aromas of light vanilla kissed with hints of honey and caramel.

LIMITED EDITION Double Barrel Bourbon Whiskey with Maple Syrup We teamed up with Catskill Mountain Sugar House to bring you this is a 90 proof bourbon that has the rich color of clover honey. The heady smell of the barrel’s wood comes through along with the pleasing maple aroma. You experience the barrel’s contributions all the way through to the taste. This is delightful bourbon that is perfect for sipping in front of a fire.
"The initial encounter is definitely the maple and this sweetness lingers pleasantly on the lips. However, the sweetness is not overpowering and the earthiness of the barrel wood balances it out nicely. Because of the dominant maple that Taconic is going for there is not the customary bourbon essences of vanilla or caramel. The finish is peppery with a slight after burn at the back of the throat that lets you know this is still 90 proof bourbon…even if it does make you want pancakes!"
Cask Strength Straight Rye Whiskey
As a young rye, one might not expect a particular smoothness AND sweetness to the 115 roof spirit. It does not disappoint. A touch of our limestone-rich artisanal water imparts an additional layer of butteriness and sweetness.
Rye lovers will appreciate this bold rye as the warm, spicy notes contrast well with the middle sweet notes on the back palate.

Rolling Hills Rum from Taconic Distillery. Born from sugarcane molasses, this gentle rum has been aged for two years in bourbon barrels and spends its last few months finishing in recently emptied Taconic Distillery’s Founder Rye Whiskey barrels. It is then cut to a mouth watering 80 proof with fresh spring water from our farm. In the glass, the rum is gold, copper and bronze depending on how it’s struck by the light. A swirl of the snifter and subsequent taste yield a touch of caramel complemented by vanilla and a hint of bourbon. The rum has a medium to long finish which leaves trails of baking spices gently warming your throat. Rolling Hills is a versatile rum, good for sipping and excellent for mixing.
To preserve the complete flavor of our whiskey, we do not chill filter.
Whiskey is distilled at below 160 proof to retain more of the flavor from the grains it was made from. Those flavors are transferred through the distilling process as fatty molecules (flavor oils). Some distillers will sacrifice a certain amount of flavor for clarity at this point, and chill filter their whiskies to remove some of these fatty molecules. They get a clear whiskey, but remove some of the flavor. Taconic does not chill filter, so sometimes our whiskey may show some “cloudiness”. This does not mean the whiskey is flawed. On the contrary, it is proof we have imparted as much flavor to the whiskey as possible.
Aging occurs in cycles. On hot summer days, the whiskey expands through the char, through the red layer, and into the well-dried but otherwise untreated wood beneath. While in the wood, the whiskey dissolves various delicious compounds. In the cool of the evening, the liquid contracts and brings all of the dissolved wood goodies out with it, where they begin to flavor the body of the whiskey.
The char layer reacts with and either traps or softens any bad congeners that remain in the spirit, taming them and rendering them either innocuous or tasty.
